Using tortillas or wraps to make a pizza is great, a nice antidote to all that Christmas fayre!
Method
Preheat your oven to 150 C / Gas mark 3
Pre-bake the tortillas for 5 mins or until crisp.
Remove the tortillas from the oven, and turn the oven up to 180 C / Gas mark 6.
Use a mixture of tinned tomatoes and tomato puree to go on the base (about 180g chopped tinned tomatoes to 1 tbsp of puree). Add dried herbs or garlic if you like.
Then top with your favourite pizza toppings. Parma ham, sliced mushroom and Mozzarella chunks is my favourite.
Bake in oven for 10-12 mins on 180.
For extra special zing, drizzle with pesto and/or balsamic glaze.
