Whether you are vegan, or catering for someone who is vegan, this mousse is absolutely delicious, easy to make, and uses some classic ingredients you are likely to have in stock. If you do not need the recipe to be vegan, the plant milk can be substituted with your usual milk, however, if you have a blender, you can make your own oat milk by blending oats with water, then sieving the resulting milk through a jam/jelly bag or muslin. The coconut oil is the critical ingredient, as it will set the mousse when it is chilled.

You will need:

2 tbsp coconut oil, melted

4 tbsp plant milk

8 tbsp maple syrup

5 tbsp cocoa powder

50g dates, pitted (if you only have dried dates, soak them until soft)

1 tin black beans, drained and rinsed

Zest of 1 orange

Method

Blend the dates and black beans together in a food processor for at least 1 minute.

Add the maple syrup, cocoa powder, milk and melted coconut oil, and process for at least another minute, until the mousse is as smooth as you can get it.

Stir in the orange zest and then spoon the mixture into individual servings. Decorate with a vegan biscuit, or keep it simple with dark chocolate shavings and orange zest, and chill in the fridge until ready to serve.
